I’ve been on a muffin kick lately. Like I said in an earlier post, I’m not overly picky with GF muffins. They just have to be good … not dry, not cardboard and certainly not tasteless! These muffins are none of those things. But, oh, these muffins are delish! They are the perfect combo of moist and slightly crumbly. But, are they easy to make you ask? You bet they are! They take about 10 minutes to throw together and another 18 minutes to bake and they are worth every minute! Miss C has eaten a few of these since her tonsils came out last week. I will probably have to wean her from her addiction once she is feeling better. She is doing remarkably well considering she had her surgery less than a week ago. I’ve had a nice, relaxing weekend with my family. The weather seems to have turned into spring and it seems as if everyone in the house has awaken from their winter slumber. The kids just want to run and jump in all the puddles and just a small part of me thinks that it would be fun to do that myself. If only I could think about nothing other than running and jumping and having a blast …. instead I think of laundry! But, nevertheless, the kids love to get dirty any chance they get. Mr. O came home from school last Wednesday covered in mud … pretty much head to toe. I asked him if he played in the mud at recess. He just replied, “Yes.” I love honesty. I smiled at him and just said … “Well, next time try to not get completely covered in it!” Being a kid is supposed to be fun … don’t get me wrong … there has to be rules … but the rules shouldn’t completely smother the fun. So it looks like all the whining and groaning I did about the weather paid off. The snow is finally melting outside! It’s funny what a few days of sunshine does to a person’s well being and frame of mind. I feel as if spring truly is in the air. Even the kids can feel it. They want to be outside playing every chance they get. Both of the kids have grown like crazy over the winter and their spring essentials are all too small … AKA rubber boots and splash pants. Yesterday we trekked off to the store to get those things. So, now we’re all set! Bring on the puddles! I really hope that this change in the weather stays … I don’t think I can handle much more cold. I’ve found that as I get older … I turn into a bit of a wimp when going outside in the cold is required. Does anyone else find the same? I don’t necessarily care about snow, but if it’s -25 C or colder … well that’s a different story.
I took Miss C to our GP yesterday for her “pre-op” visit. She is so funny. She loves going to see the doctor and each time she is fascinated by what Dr. M does to her. I honestly have never seen her shed a tear at a doctor’s office. And, Mr. O is no different. He is super inquisitive when we go. The weather here has been dreadful. I mean terrible. I can’t believe that the cold weather has hung around for so long. I’m trying really hard to stay positive; that the weather will eventually turn, but it’s hard to keep the positivity alive! Maybe today is the day that will turn things around for me. The weather seems to be improving and I’m even sending the kids outside to play in the snow today. It’s finally nice enough that they won’t freeze their noses off in 3 minutes. Seriously, this winter has not been fun, but like I said, I hope it’s looking up. Nevertheless, if it doesn’t turn soon, here’s another soup recipe that just might keep you going for another few weeks until Spring does decide to show its face around here.

Miss C has been begging me for months to make blueberry muffins. She loves any kind of muffin in general, but blueberry muffins are her favourite. She likes blueberries in almost anything and will ask for them straight out of the freezer! She’s kind of a funny kid sometimes. 🙂 Mr. O, on the other hand, does not like berries of any sort. He’s tried them, but I think he’d rather starve then eat a berry, blueberry or otherwise. It’s funny that two kids can be so different when it comes to their tastes and personalities! I must admit that I, too, have been craving a delicious muffin. I am not picky though … so give me a gluten free muffin of any kind and I’d be happy. To me, there’s nothing better than a hot cup of coffee and a muffin. In my pre-gluten free days I used to stop on my way to work and get a coffee and a muffin. Oh, that was a wonderful feeling … scarfing that muffin down without even thinking twice about what the consequences would be.
