Gluten Free Rice Krispies Squares

Happy V-Day everyone! I hope that your V-day is full of love and appreciation!  Mine has been. I spent the morning at Mr. O’s school helping set up a Valentine’s celebration for the kids and parents. It was so much fun and Miss C was such a good helper. She was excited to be at his school for the morning, mostly because she thought she would be able to go and sit in his class and be a big girl! Not yet Miss C! It was fun to see Mr. O with his class mates and friends. His Kindergarten teacher is amazing and she is so supportive of him. She is always telling me what a smart little boy he is and how well behaved he is in class. I love to hear that! It makes me so proud to be his Mommy! So back to Valentine’s Day, if you have allergies you know just how hard these “holidays” and events can be. I mean, they are all centred around food and candies and treats of all kinds! None of which Mr. O or Miss C can have. I once used to dread these holidays, but now I don’t! I used to dread them mostly because I was sad that neither of the kids could have the treats and I didn’t want them to feel left out. Now with Mr. O at school, it can be somewhat of a challenge, but he’s very understanding of what he can and can’t have and he does just fine. So does Miss C. Mind you, I always have something for both of them of equal “value” in the treat world. So today at his Valentine’s Party Mrs. T (Mr. O’s teacher) decided to have cute little “skewers” for them to munch on. They consisted of marshmallows, strawberries and rice krispies treats. Jenny’s Gluten Free Banana Bread

Okay. Yet another week has passed and I’ve been busy in the kitchen when I can spare a moment. This recipe is also near and dear to my heart. It comes from my beautiful Mom as well. She was definitely an amazing baker growing up and so we had lots of treats to choose from. Of course it wasn’t gluten free, but not to worry I’ve got that covered. Since being on this allergen free journey, I’ve had the opportunity to help or convince … whatever you want to call it, some family near and dear to me to go gluten free. One of those people is my Mom. You see, my Mom also suffers from a few of the ailments I did before I went gluten free. Chronic diarrhea (sorry to share that with the world Mom … forgive me?), bloating, gas pains, hypothyriodism, and high cholesterol … just to name a few. So, in the last 6 weeks or so, she’s finally made the plunge to be gluten free as well. She tells me she hasn’t cheated and I’m so proud of her for that. It’s a hard road, and if you’re doing it, you know just how hard it can be. She says she feels better and that her tummy problems seem to be disappearing. So, I keep encouraging her to stick with it to see how she feels in the long run. I’ve also managed to convince both of my siblings, both brothers to give it a shot as well. They are both stubborn people, so this was a hard one to accomplish. 🙂 Yes, if you’re both reading this, you are stubborn! Gluten Free Crumb Cake

So, this recipe is just what it says … my Mom’s crumb cake. I seriously remember this crumb cake recipe from when I was a kid … although, definitely not gluten free back then! My Mom has since told me that it was my Dad’s favourite cake when I was a kid … hence the reason I always saw it! But, I didn’t mind. It was always good and now I find out, super easy to make! Converting this recipe to GF, dairy free and soy free wasn’t all that hard, but getting the liquid to flour ratio took a bit of work. I made this today and after dinner, Mr. O and Miss C got to have a piece each. They both decided that they should have seconds and as Mr. O put it “I should have another piece Mommy because this cake is way too good for me!”  Yes, the logic of a 5 year old is often hilarious! The Best Gluten Free Chocolate Chip Cookies

Okay, has the title of this post created a puddle of drool on your keyboard or iPad? Yes, they are that yummy! So, I got this recipe from hubby’s Grandma B. She is a beautiful woman who honestly makes the BEST chocolate chip cookies in the world. She shared this recipe with my at my bridal shower. Yes, everyone had to bring a recipe so I could add it to my collection. Anyway, hubby remembers these cookies always readily available at Grandma B’s house whenever he would go for a visit. And, since we started dating (many, many years ago!) and he started bringing me around, I also remember her always having these cookies in the freezer. And, after we were married, I knew that if I needed to bribe hubby … this cookie was the cookie to do it. In fact, it was so good that I would honestly have a hard time getting any dough to make it to the cookie sheet. Anyway, after I went GF this recipe got pushed to the  back of the drawer. I was sad (and honestly, a little angry at the thought of missing this cookie!). These cookies were so good that I didn’t think I could ever recreate them to be GF, dairy free and soy free. I just couldn’t bring myself to try and make them GF for fear of really, really messing it up. Well, it wasn’t until recently that I stumbled upon the old recipe that I decided to give it a whirl.  And, I must say that I nailed it. They are sooooo good that I still have a problem getting the dough to hit the cookie sheet! Even hubby (who has not converted to GF) was so excited the first time that I made these GF. I got him to taste them and he was so happy I had made these cookies for him … literally … it had been years since I had…. and then I informed him “THEY’RE GLUTEN FREE”!  He was so shocked and said … “Wow … they taste incredible!” Seriously, my kids can’t stop at one and neither can I! Gluten Free Bread

So, it’s taken me a while, but finally I’m here. I’ve had a busy week with kids, but managed to squeeze in a day of bread baking. My kids love this bread and frankly, so do I. It’s much tastier and oh, so much yummier than that rock hard  gluten free bread that you buy at the grocery store. In the past couple of years I’ve tried almost every store bought bread out there and have not found one that I actually like. And, I’ve baked more loaves than I can count at home. Mostly because I believe my kids have a slight addiction to this bread. They love to help out with making it and just can’t wait to get their hands on a slice after it comes out of the oven.  This recipe is straight forward and doesn’t require a lot of babysitting like other gluten free breads I’ve tried. And, just to be clear, it’s completely dairy free, soy free and of course, gluten free! So, because this is my first recipe post on the blog, I thought it was appropriate to post this bread recipe.
